I have used the auto lock app but it is inconvenient if I need to access the back door as the doors lock instantly as soon as the front door is closed. Is there a way to delay the auto lock by a few minutes or to delay auto lock until kessy is far away from the car?

I am not sure this cording will meet your requirement or not. This cording will delay about 30 seconds after you lock rear hatch by key remote control.
STG09 Central Electronics Security Access : 31347 Adaptation Access Control Freigabenachlauf Heck nach Einzeloeffnung uber HDF Funktaster : Set Not Active to Active
When you set this cording, you can extend rear hatch release around 30 seconds after you lock.

aj, not sure if the golf is the same as the Cupra (it is in most things) but under access control there is an adaption channel called Nach externer Verriegelung ist Heck noch zeitbegrenzt entriegelt: which = After external locking Rear is still unlocked for a limited time:
