Has anyone been able to find a way to add a temperature offset to the HVAC system? I swear it's about 5 degrees hotter than what I have it set for...

I don't know if there is a way to adjust temperature offset. There are numerous temperature sensors in the MK 8. You might want to do a little investigation and see if you find anything that might be interfering with the free movement of air over the sensors. I've posted a diagram below. The following are the components you should look at: - Item 2 - this is the cabin temperature sensor. It is mounted on the inside surface of the cover underneath the steering column.
- Items 1 & 10 - temperature sensors for vent outlet temperature (left and right)
- Item 6 - this is a sunlight sensor, it is important that it is not covered up by anything.
Be aware that if the sunlight sensor is covered up or obstructed, the HVAC system will not take into account solar heating that comes from sunshine outside the car and this will result in the heating system overshooting the temperature you have selected. This problem was discovered long ago by the Phaeton owners - the Phaeton was the first VW that had a sunlight sensor installed in it.
There is also a temperature sensor for the driver footwell air supply, item 4, but it is deeply buried in the plenum and it is not likely anything you could have done would have affected this sensor.
