With the MK5 & Mk6 I previously owned, they had a DRL icon (Green Light) in the dashboard to indicate that the DRL (Daytime Running Lights) were ON.
Is it possible to activate this icon on the Mk7/Mk7.5?

I'M pretty sure the answer is yes and no.
Yes in that you can code the feature, but no in that the bulb is absent in the cluster.
In module nine, I found this:
Tagfahrlichtkontrollleuchte: not active
Translates as "Daytime running indicator light"
When I changed this to "active", and it did not work, I performed an instrument warning light output test in OBDeleven, and did not see a DRL icon in all of the warning lights that were illuminated during the test, so I assume from this that the physical bulb was not included in my build (2017 GSW S US spec)
There are similar icons for front and rear fog lights, and strangely the rear fog icon bulb is present but not the front.

Could that be that you have to turn off the rear fog when it’s not foggy? And you have to use the switch to cycle through front/rear so you know when the front is on? And as regards to the DRL light, as it’s now law they no longer need a warning light as their on all the time, whereas on the mk5/6 they were still just a option

Pretty sure the OP has an NAR MK7 like me. In the US, DRLs are not mandatory by law yet, but all VWs sold come with them coded to be always on, so it could be that they eliminated the bulb in the instrument cluster to save a few cents, but the coding for it is still there.
I don't have fogs on my GSW S, but am I to assume that the front fog indicator light on the switch itself lights up when the fogs are on? Then you wouldn't need an icon in the cluster, at least for the fronts.
