Is there a specific way a control unit has to be added to the list?
when using the pencil to add a new control uni to the list, I add control unit 76 Parking Assitance. however no matter what I do just keep saying control unit not responding.
I have cleared app data, re-installed the app, re-ticked the tick box for unit 76, but nothing.

To add a new control unit you either do what you have done (pencil add) or use the autocode gateway.
However if you are adding it via the pencil route and the color of the control unit is BLACK insead of green or red then its telling you that it cant communicate with the control unit. So there is either a problem with it or you don't have one fitted or this function on your car (sorry not my car) is not is this control unit but else where.
As an aside I presume you have factory fitted parking sensors front and rear (as against retrofitted ones)

yes, this is exactly what's happening, black circle instead of green.
and yes these are factory fitted from new.
why would there be no control unit for factory sensors? seems silly but surely it needs the control unit for the sensors?

and failing this, is there any other way that i could adjust the parkins sensor volume ? as they need to be louder, can barely hear them if the fan is on or music is at 5

Sorry dont know your car so cant say where it could be however on older cars there used to be a control unit for Comfort features then this was moved into control unit 09 so the function still there just moved to different control unit.
If you have a full backup I would do a search for Volume orand see if you can see anything. On my 2014 MQB Platform car under 76 the values are called Speaker volume for front park assist and rear park assist.
However I do know on my car in the settings (MMI Screen) there is a section where you can adjust the sound might be worth a look there.
